- 1 box chocolate cake mix
- 3 large eggs
- 1 cup milk
- 1/4 cup vegetable oil
- 2 heaping tablespoons plain Greek yogurt
- 20 mini Reese’s Peanut Butter Cups (plus extra for garnish)
- 1/2 cup room temperature butter
- 1 1/2 cups creamy peanut butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, combine the chocolate cake mix, eggs, milk, vegetable oil, and Greek yogurt. Use an electric mixer until well blended.
- Fill each cupcake liner with a small amount of batter, then place one mini Reese’s Peanut Butter Cup in the center before covering it with more batter.
- Bake for about 20 minutes or until a toothpick comes out clean. Allow cooling completely.
- For the frosting, beat together room temperature butter, creamy peanut butter, powdered sugar, vanilla extract, and enough milk to achieve desired consistency.
- Frost cooled cupcakes generously and top with additional mini Reese’s Cups if desired.
