- 8 oz short pasta (penne or fusilli)
- 2 cups ripe Roma tomatoes (chopped)
- 1 cup fresh basil leaves (torn)
- 8 oz fresh mozzarella balls (halved)
- 3 cloves garlic (minced)
- 3 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente; drain and rinse under cold water.
- In a large bowl, combine chopped tomatoes, minced garlic, and torn basil.
- Add the cooled pasta to the bowl and mix well.
- Fold in halved mozzarella balls and drizzle with balsamic vinegar; stir gently to combine.
- Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for about an hour before serving.
