- 2 medium ripe mangoes (cubed)
- 1 medium cucumber (diced)
- 1 red bell pepper (diced)
- 1/2 medium red onion (thinly sliced)
- 1/4 cup fresh cilantro (chopped)
- 2 tbsp freshly squeezed lime juice
- Salt and pepper to taste
Instructions
- Wash all produce thoroughly. Peel the mangoes and cut them into bite-sized cubes.
- Dice the cucumber and red bell pepper. Thinly slice the red onion and chop the cilantro.
- In a large bowl, combine cubed mangoes, cucumber, bell pepper, red onion, and cilantro. Toss gently.
- Squeeze lime juice over the mixture and season with salt and pepper. Stir until well combined.
- Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
- Serve chilled as a side dish or light meal.
