- 1 lb boneless, skinless chicken breasts
- 1 cup full-fat Greek yogurt
- 1 medium cucumber (about 8 oz), finely diced
- 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat grill or oven to medium heat (375°F/190°C). Season chicken breasts with salt and pepper; grill for 6-7 minutes on each side until fully cooked. Let cool before slicing.
- While the chicken cooks, finely dice the cucumber; remove seeds if desired.
- In a bowl, mix Greek yogurt, diced cucumber, dill, lemon juice, salt, and pepper until well combined.
- Once cooled, slice chicken into bite-sized pieces and add to a large bowl with the tzatziki sauce.
- Gently fold all ingredients together until evenly coated; adjust seasoning if necessary.
- Serve chilled or at room temperature; garnish with additional dill if desired.
