Ingredients
- 3 tbsp butter
- 1 small onion, minced
- 1 garlic clove, grated
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 3 tbsp flour
- 1 1/2 cups milk (or heavy cream)
- 1/2 cup shredded gruyere cheese
- 4 lb potatoes, sliced thin
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a cast-iron skillet, melt butter over medium heat. Sauté the minced onion until translucent, then add grated garlic and thyme.
- Stir in flour to create a roux, cooking for about two minutes. Gradually whisk in milk until smooth and slightly thickened. Remove from heat and stir in shredded cheese; season with salt and pepper.
- In a baking dish, layer half of the sliced potatoes followed by half of the sauce. Repeat the layers and top with extra cheese.
- Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until golden brown.
