  • 4 lb potatoes, sliced thin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast-iron skillet, melt butter over medium heat. Sauté the minced onion until translucent, then add grated garlic and thyme.
  3. Stir in flour to create a roux, cooking for about two minutes. Gradually whisk in milk until smooth and slightly thickened. Remove from heat and stir in shredded cheese; season with salt and pepper.
  4. In a baking dish, layer half of the sliced potatoes followed by half of the sauce. Repeat the layers and top with extra cheese.
