Instructions
- Roast the beets: Wash thoroughly, coat with olive oil, wrap in foil, and roast at 400°F for 45-60 minutes until tender. Let cool.
- Prepare the beets: Peel and finely grate the cooled beets.
- Mix ingredients: In a bowl, combine goat cheese, grated beets, honey, black pepper, and garlic powder until creamy.
- Form the log: Transfer mixture onto parchment paper and shape into a log.
- Coat the log: Roll in a mixture of chopped parsley and pistachios until evenly coated.
- Chill and serve: Refrigerate for at least one hour before slicing or serving whole on a platter.
