- 2 pounds baby potatoes (halved or quartered)
- 2 tablespoons olive oil
- 2 tablespoons vegan butter
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/4 cup fresh dill
- For garnish: 2 tablespoons finely chopped fresh parsley
Instructions
- Preheat your oven to 400°F and line a rimmed baking sheet with aluminum foil.
- In a large mixing bowl, combine the baby potatoes.
- In a separate bowl, whisk together olive oil, vegan butter, lemon juice, minced garlic, salt, and pepper. Stir in fresh dill.
- Pour the dill mixture over the potatoes and toss until evenly coated.
- Spread the coated potatoes onto the prepared baking sheet in a single layer.
- Bake for approximately 35 minutes, or until crisp on the outside and fork-tender on the inside. Garnish with chopped parsley before serving.
