- 2 large sweet potatoes
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- 1 cup feta cheese (or goat cheese)
- 2 tablespoons honey (or maple syrup)
- 2 tablespoons freshly chopped parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then slice them into 1/2-inch rounds.
- In a mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer. Roast for about 25–30 minutes or until golden brown and tender.
- Once roasted, drizzle honey over each round, crumble feta cheese on top, and sprinkle with parsley before serving warm.
