- 1 lb lean ground beef
- 3 medium russet potatoes (about 1.5 lbs), peeled and cubed
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- Salt and pepper to taste
- 1 tsp dried oregano
Instructions
- Prepare your ingredients by peeling and cubing the potatoes, chopping the onion, and mincing the garlic.
- In a large skillet over medium heat, add a splash of oil. Brown the ground beef for about 5-7 minutes until fully cooked.
- Add chopped onion and minced garlic to the skillet; sauté for an additional 3-4 minutes until the onion is translucent.
- Stir in the cubed potatoes and beef broth. Bring to a simmer over medium-high heat before reducing to low.
- Season with salt, pepper, and dried oregano. Cover and cook for about 20-25 minutes until potatoes are tender.
- Stir well before serving hot.
