Ingredients
- 2 pounds beef chuck, cut into chunks
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 carrots, sliced
- 2 bell peppers, chopped
- 1 cup mushrooms, sliced
Instructions
- Gather and prepare all ingredients: chop onions, mince garlic, slice carrots and bell peppers, and prepare mushrooms.
- In a skillet over medium heat, brown the beef chunks in oil for added flavor; transfer to slow cooker.
- In the slow cooker, combine chopped onion, minced garlic, sliced carrots, bell peppers, mushrooms, beef broth, tomato paste, paprika, ground cumin, salt, and pepper. Stir well.
- Cover and cook on low for 6–8 hours or high for 4–5 hours until beef is fork-tender.
- Stir the goulash before serving hot over noodles or rice with fresh bread.
