- 1 1/2 lbs chicken breasts (diced)
- 1/2 onion (diced)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 2 stalks celery (sliced)
- 2 tsp minced garlic
- 1 Tbsp cajun seasoning
- 2 tsp dried oregano
- 1 can crushed tomatoes (14.5 oz)
- 1 cup chicken broth
- 3 cups cooked rice
Instructions
- Dice the chicken into bite-sized pieces and chop the onions, bell peppers, celery, and garlic.
- In the slow cooker, combine the diced chicken, chopped vegetables, cajun seasoning, dried oregano, crushed tomatoes, and chicken broth. Stir well to combine.
- Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours until the chicken is fully cooked.
- Once cooked, stir in the pre-cooked rice until evenly mixed.
- Serve warm with optional garnishes like chopped parsley or green onions.
