- 2 pounds potatoes, cut into 1½–2 inch chunks
- 2 pounds skinless, boneless chicken breasts
- 1 cup creamy Parmesan garlic sauce
- ½ cup water or chicken stock
- 2 cups shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ¾ teaspoon ground black pepper
- ½ teaspoon paprika
Instructions
- In a slow cooker, combine potatoes with olive oil, salt, black pepper, and paprika. Stir until well coated.
- Layer the chicken on top of the potatoes and sprinkle with remaining salt and pepper.
- In a bowl, mix the creamy Parmesan garlic sauce with water until blended, then pour over the chicken and potatoes.
- Cook on High for 4 hours or Low for 6 hours until chicken is cooked through and potatoes are tender.
- About 20 minutes before serving, add mozzarella cheese on top to melt.
