Ingredients

  • 2 pounds potatoes, cut into 2 inch chunks
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • ½ cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground black pepper
  • ½ teaspoon paprika

Instructions

  1. In a slow cooker, combine potatoes with olive oil, salt, black pepper, and paprika. Stir until well coated.
  2. Layer the chicken on top of the potatoes and sprinkle with remaining salt and pepper.
  3. In a bowl, mix the creamy Parmesan garlic sauce with water until blended, then pour over the chicken and potatoes.
  4. Cook on High for 4 hours or Low for 6 hours until chicken is cooked through and potatoes are tender.
  5. About 20 minutes before serving, add mozzarella cheese on top to melt.
