- 1 lb Boneless Chicken Breasts or Thighs
- 2 cups Corn (fresh, frozen, or canned)
- 4 oz Cream Cheese (regular or vegan)
- 1/3 cup Cotija Cheese (or Feta)
- Juice of 1 Lime
- 2 cloves Garlic (minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
Instructions
- Place the chicken at the bottom of the slow cooker.
- In a bowl, mix corn, cream cheese, cotija cheese, lime juice, minced garlic, chili powder, smoked paprika, and onion powder until well combined. Pour this mixture over the chicken.
- Cover and cook on low heat for about 4 hours until the chicken is tender.
- Remove and shred the chicken using two forks; return it to the slow cooker and stir to combine.
- Serve warm with optional garnishes like cilantro.
