- 225 g all-purpose flour

- 1/2 tsp nutmeg
- 1 tsp salt
- 1/2 tsp bicarb soda
- 50 g brown sugar
- 160 g caster sugar
- 300 g pumpkin puree
- 2 eggs
- 190 g vegetable oil
- 1/2 tsp vanilla extract
- 150 g dark chocolate chips
Instructions
- Preheat your oven to 175°C (350°F) and grease a loaf pan.
- In a large bowl, whisk together flour, spices, baking soda, salt, and sugars until thoroughly combined.
- In another bowl, blend the pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
- Gradually fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
- Gently fold in the dark chocolate chips.
- Pour the batter into the prepared pan and bake for about 70 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes in the pan before transferring to a wire rack.
