Ingredients
- 1 1/2 cups dry short grain sushi rice
- 2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 can (12 oz) chicken or turkey
- 2 1/2 teaspoons soy sauce
- 2 tablespoons sugar
- 1/4 cup water
- 6 eggs
- 3 sheets roasted seaweed nori (cut into 2 inch wide strips)
Instructions
- Rinse the sushi rice until the water runs clear, then cook it with water in a rice cooker or pot. Mix rice vinegar, sugar, and salt; drizzle over cooked rice and mix gently.
- Slice the chicken or turkey into thick pieces and brown them in a skillet until crispy.
- For caramelization, sprinkle sugar over the meat, pour in a mixture of soy sauce and water, and simmer until thickened.
- Whisk eggs together and cook in a skillet to form thin omelets; roll them up tightly.
- Assemble by layering sushi rice, an omelet slice, and caramelized meat onto nori; wrap securely.
