  • 1½ cups whole milk
  • 1 cup heavy cream
  • 1½ tsp ground cinnamon
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Roll out the pie crust into a 9-inch dish, line with parchment paper, fill with baking weights, and bake for 15 minutes. Remove weights and parchment; bake for another 5 minutes until golden. Cool slightly.
  2. In a saucepan, heat milk and cream with cinnamon and vanilla until steaming (do not boil). If using whole spices, steep for 10 minutes then remove.
  3. In a mixing bowl, whisk eggs, sugar, and salt until smooth.
  4. Slowly pour hot milk mixture into eggs while whisking constantly. Strain through a fine-mesh sieve.
  5. Lower oven temperature to 325°F (160°C). Pour custard into pre-baked crust and bake for 35–40 minutes until edges are set but center jiggles slightly.
