  • 4 cups chicken broth
  • 1 cup water
  • 1 can (15 oz) red kidney beans (drained and rinsed)
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • 1 cup ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional, for extra heat)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and cook the spicy Italian sausage until browned. Break it into smaller pieces as it cooks.
  2. Add diced onions, carrots, celery, and minced garlic to the pot, sautéing until the vegetables are tender.
  3. Stir in crushed tomatoes, chicken broth, water, red kidney beans, cannellini beans, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a boil.
  4. Reduce heat to low and add ditalini pasta. Cook according to package instructions until al dente.
