- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 large jalapeños, seeds removed and diced
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion for about 5 minutes until softened.
- Add minced garlic and diced jalapeños; cook for 2 minutes until fragrant.
- Incorporate chicken breasts and chicken broth; bring to a boil, then reduce heat and simmer for 15 minutes until chicken is cooked through.
- Remove chicken, shred it using two forks, and return it to the pot.
- Stir in heavy cream, cumin, paprika, salt, and pepper.
- Mix in softened cream cheese until smooth, followed by shredded cheddar until melted.
- If desired, add crumbled turkey bacon for extra flavor and simmer for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro.
