- 1 medium sweet potato, peeled and cubed
- 1 cup cooked ground turkey or beef, seasoned
- 1 avocado, sliced
- 1 cup cottage cheese
- 1 tsp olive oil
- 1 tsp smoked paprika
- Salt & pepper to taste
- Red pepper flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet in a single layer and roast for about 25 minutes, flipping halfway.
- In a skillet over medium heat, add olive oil and cook the ground turkey or beef until browned (about 6-8 minutes).
- Slice the avocado and season with salt, pepper, and red pepper flakes.
- To assemble the bowl: Layer roasted sweet potatoes on one side, add ground meat next to them, place sliced avocado on top, and spoon cottage cheese over everything.
