Ingredients

  • 6 large eggs
  • 2 tbsp mayonnaise
  • 1 tbsp spicy brown mustard
  • 3 drops red food dye (or beet juice)
  • Salt & pepper to taste
  • 12 medium cocktail olives (with pimentos)
  • 3 slices white bread (or 12 rice crackers)

Instructions

  1. Boil the eggs in water for about 20 minutes. Cool in cold water before peeling.
  2. Slice each egg in half and remove yolks. Push yolks through a mesh strainer into a bowl.
  3. Combine yolks with mayonnaise, mustard, salt, pepper, and red dye until creamy.
  4. If using bread, cut into circles and toast until crispy.
  5. Assemble by filling egg whites with yolk mixture, inserting olive slices on top.
