Instructions
- Preheat your oven to 325°F (163°C).
- Prepare an 8×5 loaf pan by spraying with nonstick spray or lining it with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In another bowl, combine egg, sugar, and vegetable oil; whisk until smooth.
- Stir the dry ingredients into the wet ingredients until just combined.
- Add buttermilk, vanilla, and mashed bananas; mix until smooth.
- Pour the batter into the prepared loaf pan and sprinkle walnuts on top.
- Bake for 60-75 minutes or until a knife inserted in the center comes out clean.
