Ingredients
- 4 yellow plantains
- 2 tbsp avocado oil (separated)
- 1 lb ground beef
- ½ medium onion (finely diced)
- 2 garlic cloves (minced)
- ½ green bell pepper (diced)
- ½ red bell pepper (diced)
- ¼ cup tomato sauce
- ¼ cup beef bone broth
- adobo seasoning
- kosher salt
- black pepper
- cayenne pepper
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Cut both ends off each plantain and score the skin lengthwise; peel gently.
- Coat with 1 tbsp avocado oil and roast for 30 minutes, flipping halfway.
- While roasting, heat remaining oil in a skillet over medium heat; sauté onion, garlic, and bell peppers until soft.
- Increase heat, add ground beef, and cook until browned.
- Stir in adobo seasoning, tomato sauce, broth, and spices; simmer until liquid mostly evaporates.
- Cut slits in roasted plantains and fill generously with the beef mixture.
