- ½ cup mashed potatoes

- 3 medium tomatoes (for salsa)
- ½ small onion (for salsa)
- 3 chile de arbol (optional, for salsa)
- 1 clove garlic (for salsa)
- 1 Tablespoon dried oregano (for salsa)
- ½ teaspoon ground cumin (for salsa)
- 1 teaspoon vegetable oil (for salsa)
- Salt and pepper (to taste for salsa)
- Pickled onions (for serving)
- Lettuce (shredded, for serving)
- Mexican crema (or sour cream, for serving)
- Queso fresco (or any cheese you prefer, for serving)
Instructions
- In a bowl, combine shredded beef, mashed potatoes, diced tomato, chopped onion, jalapeno, cumin, salt, and pepper.
- Heat vegetable oil in a skillet over medium heat.
- Fill each tortilla with the beef mixture and fold them in half.
- Fry the tacos in the hot oil until golden brown on both sides (3-4 minutes per side). Drain on paper towels.
- For salsa, blend tomatoes, onion, garlic, oregano, cumin, oil, salt, and pepper until mixed.
- Serve tacos dorados topped with salsa and your choice of toppings.
