  • 2 lbs boneless skinless chicken breasts
  • 1 lb cooked turkey sausage
  • 1 ½ cups fresh pineapple
  • 1 small red bell pepper
  • 1 small green bell pepper
  • ½ medium red onion
  • Marinade: soy sauce, brown sugar, garlic, ginger, cornstarch, water

Instructions

  1. In a small saucepan, combine marinade ingredients and bring to a boil over medium heat. Simmer for 1-2 minutes until thickened. Let cool slightly.
  2. In a large Ziploc bag, add chicken pieces and pour in marinade (reserve some for basting). Seal tightly and refrigerate for at least 30 minutes.
  3. Soak skewers in water to prevent burning.
  4. Preheat grill to medium heat.
  5. Thread marinated chicken, sausage, pineapple, and vegetables onto soaked skewers.
  6. Grill for about 10-12 minutes, turning occasionally until chicken is cooked through (165°F). Brush with reserved marinade before serving.
