Ingredients
- 1 cup mixed berries (strawberries and raspberries)
- 4 oz cream cheese
- 2 eggs
- 2/3 cup milk
- 4 thick slices of brioche or challah bread
- Maple syrup and whipped cream for serving
- 1 tbsp lemon juice
- 1 tbsp sugar
- 1/4 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla
- 1/2 tbsp lemon juice
- 1/4 cup sugar (add 1/2 cup if you don't want to serve with any syrup)
- 1/4 to 1/2 tsp cinnamon
- 2 tbsp sugar to fry
- 2 tbsp butter to fry
Instructions
- Prepare the berry compote by combining chopped berries, lemon juice, and sugar in a nonstick saucepan. Cook over low heat until thickened.
- For the cheesecake filling, beat cream cheese until creamy, then mix in powdered sugar, heavy cream, vanilla, and lemon juice until smooth. Transfer to a piping bag.
- Whisk together eggs, milk, sugar, cinnamon, and vanilla in a bowl. Pour into a deep plate.
- Cut pockets into each bread slice and fill generously with cheesecake filling using the piping bag.
- Dip each filled slice into the egg mixture on both sides.
- Fry in butter over medium heat until golden brown on both sides.
- Serve hot topped with berry compote, maple syrup, and whipped cream.
