- 4 portobello mushroom caps
- 2 tbsp balsamic vinegar
- 1 tbsp low sodium soy sauce
- 1 tbsp olive oil
- 1 tbsp chopped rosemary
- 1–1/2 tsp steak seasoning (like Montreal Steak Grill Mates)
- 4 oz reduced fat Swiss cheese (sliced thin)
- Whole wheat low-calorie buns
Instructions
- Prepare the marinade by whisking together balsamic vinegar, soy sauce, olive oil, rosemary, and steak seasoning in a large bowl.
- Add portobello mushroom caps to the marinade, tossing to coat evenly. Let them marinate at room temperature for 20-30 minutes.
- Preheat your grill or indoor grill pan over medium heat and brush with oil to prevent sticking.
- Grill the marinated mushrooms for about 5-7 minutes per side, basting with reserved marinade until tender.
- During the last minute of grilling, place a slice of Swiss cheese on each mushroom cap to melt.
- Toast whole wheat buns until golden brown and assemble by layering baby spinach, grilled mushrooms, onions, tomatoes, and avocado on each bun.
