Ingredients
- 1 cup extra-virgin olive oil (divided)
- 4 sprigs of fresh thyme
- 1 handful of almonds (or your preferred nuts, roughly chopped)
- 8 garlic cloves (thinly sliced)
- 1/2 teaspoon Aleppo pepper or red chili flakes (optional for a hint of heat)
- 3 ounces (85 g) feta cheese, crumbled
- 1/3 cup fresh parsley (chopped)
- Fresh bread (for serving)
Instructions
- Prepare the oil infusion by heating half the olive oil with thyme until fragrant; cool slightly.
- Sauté garlic in remaining olive oil until golden; add chopped almonds to toast lightly.
- Blend sautéed garlic, almonds, crumbled feta, parsley, and cooled thyme-infused oil in a food processor until smooth.
- Transfer to a serving bowl and garnish with extra olive oil and herbs.
