  • 1 teaspoon lemon zest

  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • Red pepper flakes
  • Kosher salt and black pepper
  • 1 1/22 cups cherry tomatoes, halved if large
  • 23 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds (or other nut/seed)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the vinaigrette by combining olive oil, vinegar, honey, shallot, garlic, lemon zest, basil, and oregano in a glass jar. Shake until smooth.
  2. In a large bowl, mix cherry tomatoes, peach wedges, and cherries. Drizzle one-third of the vinaigrette over the fruit and toss gently.
  3. Let the mixture sit for 15 minutes to enhance flavors.
  4. To serve, break burrata over the salad, drizzle with remaining vinaigrette, and sprinkle with toasted pumpkin seeds.
