- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter, cut into cubes
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, cold
- 2 teaspoons pure vanilla extract
- 4 ounces semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips
- 3/4 cup coarsely chopped walnuts
- Sea salt, optional
Instructions
- Preheat your oven to 400°F and line two cookie sheets with parchment paper.
- In a medium bowl, whisk together the flours, cornstarch, baking powder, baking soda, and salt.
- In a stand mixer, beat cold butter with both sugars until creamy. Add the cold egg and vanilla; mix until combined.
- Gradually mix in the chopped chocolate and flour mixture until just incorporated.
- Scoop out dough into large balls (about 1/2 cup each) and place on prepared sheets.
- Bake for 12-13 minutes or until golden around the edges. Allow cooling on sheets before transferring to wire racks.
