- 2 lbs flank steak
- 2 bay leaves
- 1 teaspoon salt
- 1/4 cup fresh lime juice
- 6 tablespoons neutral oil (divided)
- 4 cloves garlic (minced)
- 1 tablespoon complete seasoning
- Salt + pepper to taste
- 1 medium white onion (sliced)
- Lime wedges for serving
Instructions
- Boil the flank steak with bay leaves and salt in a large pot until tender (about 1 to 1.5 hours). Alternatively, pressure cook for 30-40 minutes.
- Shred the cooked beef using two forks.
- Marinate shredded beef with lime juice, 2 tablespoons of oil, garlic, complete seasoning, salt, and pepper for about 30 minutes.
- Heat remaining oil in a skillet. Fry shredded beef in batches until crispy (5 minutes per side).
- Sauté sliced onions with the beef until softened (4-5 minutes).
- Serve hot with rice, beans, and lime wedges.
