  • 400g tin full-fat coconut milk

Instructions

  1. Blend silken tofu, peanut butter, agave syrup, vanilla extract, and salt until smooth.
  2. Spoon the mixture into ramekins or jars and refrigerate while preparing the ganache.
  3. Melt dark chocolate using a microwave or double boiler, then whisk in the creamy part of the coconut milk.
  4. Pour the ganache over the mousse and chill in the fridge for at least 1 hour before serving.
