Ingredients
- 1 teaspoon oil
- 3 cloves garlic (chopped)
- 10 ounces fresh baby spinach
- 16 ounces vegan cream cheese (room temperature)
- ⅓ cup vegan mayo
- 1 (14-ounce) can artichoke hearts (drained and chopped)
- ¼ cup nutritional yeast
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Preheat oven to 400°F.
- Heat oil in a large pan over medium heat. Sauté garlic until browned (about 2 minutes), then add spinach and cook until wilted.
- In a baking dish, mix vegan cream cheese and mayo until smooth. Stir in chopped artichokes, nutritional yeast, sautéed spinach, salt, and pepper until well combined.
- Bake for 15-20 minutes or until hot and bubbly. Serve warm with your favorite dippers.
