Ingredients
- 1 cup water
- ¾ cup caster sugar
- 1 Tbsp fresh lemon juice
- 8 cups ripe watermelon, cubed
Instructions
- In a saucepan, combine water, sugar, and lemon juice. Heat on low until sugar dissolves.
- Increase heat to high and boil for 5 minutes; let cool for 30 minutes.
- Puree the cubed watermelon in a blender until smooth.
- Strain the puree through a fine sieve into a bowl.
- Mix the cooled sugar syrup with the strained watermelon juice.
- Chill the mixture in the refrigerator for 2 hours.
- Pour into an ice cream machine and churn as per instructions until firm.
- Transfer to an airtight container and freeze until solid.
