Ingredients
- 1/2 medium watermelon
- 1/2 lb strawberries, sliced
- 1 cucumber, quartered and sliced
- 1 cup feta cheese, crumbled
- 10–15 mint leaves, roughly chopped
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare the watermelon by removing its rind and dicing it into 1-inch pieces. Place these in a large mixing bowl.
- Add the sliced strawberries, quartered cucumbers, crumbled feta cheese, and chopped mint to the bowl.
- Gently stir to combine all ingredients evenly.
- Chill the salad for about 10 minutes to allow flavors to meld before serving.
