Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast, cubed
- 1 yellow onion, diced
- 2 tablespoons minced garlic
- 2 cans green chiles
- 1½ cups corn (canned or frozen)
- 2 (15.9-ounce) cans great northern beans
- 3 cups chicken broth
- 1 teaspoon salt
- ½ teaspoon pepper
- 1½ teaspoon cumin
- ½ teaspoon oregano
- ½ teaspoon chili powder
- ½ cup heavy cream (optional)
Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Sauté cubed chicken and diced onion until chicken is cooked through and onion is translucent.
- Stir in minced garlic and cook until fragrant.
- Add green chiles, corn, beans, chicken broth, and spices; mix well.
- Cover and simmer for about 20 minutes.
- Fold in heavy cream before serving if desired.
