Ingredients
- 1/2 cup turbinado sugar
- 1/3 cup whole milk
- 3 tbsp neutral cooking oil
- 1 tsp pure maple syrup
- 1 large egg
- 3/4 cup all-purpose flour
- 1/2 cup plus 1 tbsp rolled oats
- 1 tsp baking powder
- Pinch salt
- 1/3 cup dried apricots, minced
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together turbinado sugar, whole milk, cooking oil, maple syrup, and egg until blended.
- In another bowl, mix all-purpose flour, rolled oats, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined. Gently stir in minced dried apricots.
- Spoon the batter into a greased muffin tin, filling each cup two-thirds full. Sprinkle reserved oats on top.
- Bake for about 23 minutes or until golden brown and a toothpick comes out clean.
- Let cool in the tin for 5 minutes before transferring to a wire rack.
