  • 1 tsp pure maple syrup
  • 1 large egg
  • 3/4 cup all-purpose flour
  • 1/2 cup plus 1 tbsp rolled oats
  • 1 tsp baking powder
  • Pinch salt
  • 1/3 cup dried apricots, minced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together turbinado sugar, whole milk, cooking oil, maple syrup, and egg until blended.
  3. In another bowl, mix all-purpose flour, rolled oats, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Gently stir in minced dried apricots.
  5. Spoon the batter into a greased muffin tin, filling each cup two-thirds full. Sprinkle reserved oats on top.
  6. Bake for about 23 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool in the tin for 5 minutes before transferring to a wire rack.
