- 2 medium zucchinis
- 1 can (400g) chickpeas
- 1 red bell pepper
- 1 small red onion
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400F (200C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine sliced zucchinis, drained chickpeas, bell pepper, and onion. Drizzle with olive oil and sprinkle in oregano, paprika, salt, and pepper. Toss until well-coated.
- Spread the mixture evenly on the baking sheet and roast for 25-30 minutes, tossing halfway through for even cooking.
- After roasting, sprinkle crumbled feta over the vegetables and return to the oven for an additional 5 minutes.
- Garnish with fresh parsley before serving warm.
