Ingredients
- Zucchini (20 oz)
- Cherry tomatoes (1/2 cup)
- Shaved parmesan cheese (1/3 cup, optional)
- Pine nuts (1/3 cup)
- Fresh parsley (1 tbsp)
- Fresh chives (1 tbsp)
- Extra virgin olive oil (1/4 cup)
- Lemon juice (3 tbsp)
- Garlic powder (1/2 tsp)
- Sea salt (1/4 tsp)
- Black pepper (1/4 tsp)
Instructions
- Slice zucchini into thin ribbons using a mandoline or vegetable peeler.
- In a small bowl, whisk together olive oil, lemon juice, parsley, chives, garlic powder, sea salt, and black pepper.
- In a mixing bowl, combine zucchini ribbons and halved cherry tomatoes. Drizzle dressing over the top and toss gently to coat. Allow marinating for 5 minutes.
- Toast pine nuts in a skillet over medium heat for 3-5 minutes until golden brown.
- Serve the salad on a platter topped with toasted pine nuts and shaved parmesan if desired.
