- 1 teaspoon corn starch
- 3/4 cup powdered sugar
- 1 1/2 – 2 1/2 teaspoons milk or cream
Instructions
- Preheat oven to 425°F (220°C) and prepare a muffin pan with liners.
- In a bowl, mix flour, sugar, and salt for the streusel topping; add melted butter until crumbly.
- In another bowl, blend cream cheese, sugar, corn starch, and vanilla for the filling.
- Combine dry ingredients: flour, baking powder, and salt.
- Whisk egg and sugar; add yogurt, oil, and vanilla until well mixed.
- Fold wet ingredients into dry ingredients gently; then incorporate fresh berries carefully.
- Fill muffin liners with batter, add cream cheese filling in the center, top with reserved berries.
- Sprinkle streusel topping over muffins and bake for 30–35 minutes at 350°F (175°C) until golden.
