- 4 cups powdered sugar
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time and mix in vanilla extract along with shredded carrots and oats.
- In another bowl, whisk together flour, baking soda, salt, cinnamon, and ginger; then gradually incorporate into the wet mixture.
- Chill scooped dough on a baking sheet for 20–30 minutes before baking for 12–15 minutes until golden brown. Cool completely before filling with cream cheese frosting.
