Instructions
- Preheat your oven to 400°F and lightly spray an 8×8-inch casserole dish with nonstick cooking spray.
- Layer sliced potatoes and onion rings in the prepared baking dish.
- In a medium saucepan over medium heat, melt butter, then whisk in flour and salt for one minute.
- Gradually add room temperature milk while stirring until thickened.
- Stir in cheese until melted and smooth.
- Pour cheese sauce over the potato and onion layers, cover with foil, and bake for 85-90 minutes until tender.
- For a crispy top, broil for a few minutes until golden brown.
- Season with salt and pepper before serving warm.
