Ingredients
- 1 pound chicken breast
- 8 ounces dry pasta
- 2 cups grape tomatoes (halved)
- 4 ounces baby spinach
- 1/3 cup grated Parmesan cheese
- 1/4 cup extra light extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 tablespoon dried basil
- 1/2 tablespoon dried oregano
- 1/4 teaspoon garlic powder
- 1/2 teaspoon fine table salt (or more to taste)
- fresh cracked pepper
Instructions
- 1. Cook the pasta in salted boiling water until al dente. Drain and cool in ice water.
- 2. Season chicken breasts with salt and pepper. Grill or cook in a skillet until internal temperature reaches 165°F.
- 3. In a large bowl, combine cooked pasta, sliced chicken, halved tomatoes, and spinach. Drizzle dressing over the top and toss gently.
- 4. Sprinkle with grated Parmesan cheese before serving.
