- 1 lb chicken thighs
- 1 1/2 tsp chipotle chili powder

- Salt and pepper to taste
- 1 cup black beans
- 1 cup corn kernels
- 2 cups cooked rice
- 2 tbsp lime juice
- 1/2 cup Greek yogurt
- 2 tbsp mayonnaise
- 2 tbsp chopped cilantro (optional)
Instructions
- Season chicken thighs with chipotle chili powder, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat and cook chicken until seared and fully cooked. Let rest before slicing.
- In a mixing bowl, combine Greek yogurt, mayonnaise, lime juice, chipotle powder, and salt; mix until smooth.
- Warm black beans and corn in a small pan with lime juice; season to taste.
- Assemble bowls with rice at the bottom, topped with sliced chicken, black beans, corn mixture, and creamy sauce.
- Garnish as desired with fresh herbs or additional toppings before serving.
