- 1/2 cup unsalted butter (melted)
- 1 cup light brown sugar (packed)
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt (optional)
- 3/4 to 1 cup semi-sweet chocolate chips
- 1 cup cherries (fresh or frozen)
Instructions
- Preheat your oven to 350°F. Line an 8-by-8-inch baking pan with aluminum foil and lightly spray it with cooking spray.
- In a medium microwave-safe bowl, melt the butter for about 60 seconds until fully liquefied.
- Stir in the packed brown sugar until well combined.
- Mix in the egg and vanilla extract until smooth.
- Gently fold in the flour until just combined, avoiding over-mixing.
- Fold in chocolate chips and cherries.
- Pour the batter into the prepared pan and smooth it out gently. Bake for 27 to 32 minutes until edges pull away slightly from the sides of the pan.
- Allow cooling for at least one hour before slicing.
