Ingredients
- 2 pounds mushrooms (wild variety preferred)
- 4 sprigs fresh thyme (leaves only)
- 2 cloves garlic (chopped)
- 1/4 cup fruit juice or broth (as a Cognac substitute)
- 1/2 cup heavy cream
- 4 New York Strip Steaks
Instructions
- Remove steaks from refrigerator for 30 minutes before cooking and season with salt and pepper.
- Heat a skillet over medium-high heat; add olive oil and sauté mushrooms for about 10 minutes until golden brown.
- Stir in thyme and garlic, season with salt and pepper, then transfer mushrooms to a platter.
- In the same skillet, add fruit juice or broth and simmer for about 2 minutes before adding heavy cream. Cook until thickened.
- Return mushrooms to the pan; simmer for an additional 2 minutes to combine flavors.
- Grill steaks at high heat until browned; lower heat to finish cooking to desired doneness.
- Serve mushroom sauce over steak or as a side.
