- 1 cup plus 2 tablespoons granulated sugar (divided)
- 1 cup all-purpose flour
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 to 1 teaspoon almond extract
- 2 cups plus 1/4 cup fresh blueberries (divided)
Instructions
- Preheat your oven to 350°F (175°C) and spray a 9-inch round pie dish with cooking spray.
- In a large bowl, whisk together the sugar, flour, cinnamon, and salt.
- In another bowl, melt the butter and let it cool slightly before whisking in the eggs, vanilla extract, and almond extract.
- Combine wet ingredients with dry ingredients until just mixed; fold in 2 cups of blueberries.
- Pour the batter into the prepared dish and top with remaining blueberries and additional sugar.
- Bake for 34 to 39 minutes or until edges are set and a toothpick comes out clean.
- Allow the pie to cool before serving.
