- 1 1/2 cups unbleached all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 3/4 cup dark brown sugar
- 3/4 teaspoon baking soda
- 3/4 teaspoon sea salt
- 1/3 cup extra-virgin olive oil
- 2 large eggs (lightly beaten)
- 1 1/2 cups ultra-ripe bananas (mashed)
- 1/4 cup sour cream or plain Greek yogurt
- 1 1/2 teaspoons vanilla extract
- 1 cup coarsely chopped dark chocolate (or dark chocolate chips)
- Optional: 1/2 cup chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F and grease a cast iron skillet or loaf pan with olive oil.
- In a large bowl, whisk together flour, cocoa powder, dark brown sugar, baking soda, and salt until well combined.
- In another bowl, mix olive oil, eggs, mashed bananas, sour cream, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in chopped dark chocolate and optional nuts without overmixing.
- Transfer the batter to your prepared skillet or loaf pan and bake for 28 to 35 minutes (check doneness with a toothpick).
- Allow to cool for about 20 minutes before serving.
