- 1 box Vanilla Cake Mix
- 3 large Eggs
- 1.5 cups Milk
- 1.25 cups Powdered Sugar
- 1.25 sticks Unsalted Butter
- 1.25 cups Cream Cheese
- 0.67 cups Passion Fruit Puree
Instructions
- Preheat oven to 350°F (175°C). Grease a baking pan.
- In a bowl, mix vanilla cake mix, eggs, and milk until well combined.
- Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
- Allow the cake to cool completely.
- For frosting: Beat powdered sugar, butter, cream cheese until smooth; spread over cooled cake.
- Prepare passion fruit curd by whisking together sugar, egg yolks, and egg in a saucepan over low heat. Add passion fruit puree and stir until thickened; mix in butter until smooth.
- Pour curd over frosted cake and garnish with fresh passion fruit pulp before serving.
