Ingredients
- 2 lean chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 slices Mozzarella cheese
- ½ cup red cherry tomatoes (halved)
- ½ cup basil pesto
- Fresh basil leaves (for garnish)
- Fresh lemon juice
Instructions
- In a bowl, combine chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss to coat.
- Preheat your grill or grill pan over medium-high heat. Grill the chicken for 6 to 8 minutes on each side until fully cooked.
- During the last minute of grilling, place a slice of Mozzarella cheese on each piece of chicken and cover until melted.
- In a small bowl, mix halved cherry tomatoes with thinly sliced basil leaves and lemon juice.
- Top each grilled chicken breast with pesto and the tomato mixture. Garnish with freshly cracked black pepper and serve immediately.
