Ingredients
- 2 cups sugar
- 1 cup butter (softened)
- 1 1/2 teaspoons pure vanilla extract
- 3 large eggs
- 2 1/2 cups cake flour
- 1 cup baking cocoa (sifted)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup instant chocolate pudding mix
- 2 1/4 cups buttermilk
- 1 cup semi-sweet chocolate chips
- 1/2 cup water
- 1/2 cup butter
- 1 teaspoon vanilla
- 1 cup baking cocoa (sifted)
- 3 1/2 cups powdered sugar
- 3 tablespoons heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In another bowl, whisk together cake flour, cocoa powder, baking soda, salt, and pudding mix.
- Gradually add the dry ingredients to the wet mixture while alternating with buttermilk until just combined.
- Gently fold in chocolate chips.
- Pour the batter into the prepared pan and bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before preparing the ganache by melting water and butter together, stirring in cocoa powder and powdered sugar until smooth; adjust consistency as needed with heavy cream.
- Once cooled, frost the cake with ganache.
